COMPANY OVERVIEW Blau & Associates oversees the Food and Beverage operations at Parq Vancouver including the Victor. Victor represents the ultimate in a classic North American Steak & Seafood experience. The Victor features a contemporary and seasonally inspired menu highlighting a wide array of Pacific Northwest seafood and a tiered selection of specialty steaks. An elegant bar offers premium libations, cutting edge cocktails, and an extensive selection of champagnes and wines. The Victor boasts a vibrant energy that echoes and amplifies the vitality of the city of Vancouver, overlooking False Creek and a 30,000 square foot rooftop urban park. We are looking for YOU to join our team. POSITION OVERVIEW The Sushi Cook is primarily responsible for the preparation, assembly and cooking of food items for a specific kitchen station. The Sushi Cook assists with inventory and ordering for a particular station and cleaning of the entire kitchen. The Sushi Cook will promote the Parq Vancouver facility and act as a positive role model and representative of Blau & Associates. The Sushi Cook continually strives for 100% guest satisfaction. GENERAL RESPONSIBILITIES The Sushi Cook is responsible for: Working in collaboration with other Team Members and Departments to ensure the kitchen and outlets operate in accordance with established operational procedures Proper set-up, maintenance and adherence to scheduled duties, ensuring mise-en-place and par stock is maintained for all position related items, conducting regular inventory and ordering products as required Regularly inspecting food and supplies ensuring that proper product rotation and safe food preparation and storage standards are maintained Ensuring food preparation is completed for a specific kitchen station and assembling or cooking items as required Following established sanitation standards, maintaining a clean work station and assisting with cleaning of the overall kitchen and service areas Maintaining a composed and professional demeanor while providing exemplary service Being aware of menu items, menu and operational changes and communicating the information as appropriate QUALIFICATIONS The Sushi Cook must: Have experience at least 2 years of experience as a Sushi Cook or in a similar environment including a hotel, restaurant, catering or other fast paced high-volume establishment Have be familiar with Japanese cuisine – including experience in making nigiri, maki, tempura, udon and cutting sashimi. Have a valid Foodsafe Level 1 certificate. A red seal certificate would be considered an asset Have an excellent command of both spoken and written English.
